Yeah, the only people who worry about being “authentic” are hipsters who are completely out of touch with reality.
I think it a hallmark of our times that “authenticity” is the word used most in reference to an obvious affectation.
I don’t know if you have these in other cities but in NY we have a ton of Mexican take-out places run by Chinese people. While most of them also serve Chinese food there are some that only serve Mexican.
Whereas here in Utah it’s more likely to be the other way around.
